Quesadilla Ring

We love quesadillas around our house. They are pretty versatile when you think about it; you can stuff them with multiple varieties of ingredients and dip them in any number of sauces. When I recently came across this Quesadilla Ring, we had to give it a try. Besides the taste and versatility, this is a pretty fun appetizer to put out at your next party and “wow” your guests.

For my first try, I grabbed my That’s My Pan pie pan and made Chicken Quesadillas. Here is what I used:

3 cooked, shredded chicken breasts

1 lb Fiesta Blend shredded cheese

bacon bits (amount varies by personal taste)

20 pack bag of small Flour Tortillas (I used 17)

Jar of your favorite salsa



In a large mixing bowl, combine shredded chicken, 1 cup shredded cheese and 3 – 4 Tablespoons bacon bits.

Mix until evenly combined.

Grab a tortilla, cut down the center and put a thin layer of filling on each half. Then roll starting from cut end as in photo below.

Once you have rolled a few, start placing them in the pie pan. I used a juice glass turned upside down in the middle of the pan to shape the ring.

When you get the first layer finished, top it off with a generous sprinkling of cheese.

Repeat the process until you either run out of stuffing or feel like it’s big enough:) I ended up with 3 layers. Sprinkle more cheese over the whole tower.

Carefully remove the glass from the center of the ring and bake in oven @ 350 for about 10-15 minutes or until lightly toasted and cheese is melted.

Remove from oven.

Place salsa in a bowl that will fit your ring. (I used the juice glass turned right side up)

When the ring cools a bit, place the salsa in the middle then pull and eat!
